Try the Chicken Liver Mousse with house-pickled cauliflower, carrots, and a quince mustardo, paired with Amontillado. High in acid but it still has hips, is nutty, and with a creamy and rich nose. These wines offer the right amount of acid and weight to make the creamy texture of the mousse pop.
