Die zum Verzeichnis der Almacenistas ("Lagerhalter") gehörenden Weinunternehmen müssen im Ausbaugebiet, d.h. in den Orten Jerez de la Frontera, El Puerto de Santa María und Sanlúcar de Barrameda angesiedelt sein und ferner die für den Weinausbau festgelegten Anforderungen erfüllen. Die von diesen Bodegas vertriebenen Weine haben wiederum die Ausbau- und Vertriebskellereien zum Ziel. Diese verwenden die Weine, um sie entweder in ihre eigenen Alterungssysteme einzuführen oder um sie in die Blendings ihrer eigenen Vertriebsmarken aufzunehmen.

Three generations of "mayetos" (farmers who practice small-scale traditional agriculture) define the origin and story of Callajuela. In 1980, Francisco Blanco Martínez started a small bodega after more than 20 years as a laborer in various vineyards. Located in the center of the Barrio Alto of Sanlúcar, almost all of the their production was allocated to sell to other bodegas. In 1989 José and Francisco Martínez created the Callejuela brand, taking charge of cultivation of the vineyard and the bodega process, producing the entire range of Sherry wines.

The Bodega was estalished in 1987 by Mr. Jose Port and D.Ventura Nuñez, both of whom have substantial experience in the sector. They are owners of one of the most important cooperages in the area aging mainly Oloroso in american oak casks. From an architectural point of view, the bodega features areas with pointed arches from the eighteenth century and round arches from the nineteenth century. Other features include beamed ceilings and Arab tiles, along with wide walls and tall windows as well as the typical enclosed courtyard and well, iconographic of the classical Bodegas of Jerez.
