Spiced Fried Prawns

Medium Sherry has an incredible range of character and balance and pairs perfectly with lightly spiced food. The wine is a blend of Oloroso and or Amontillado and normally blended with a small proportion of PX around 5%.

Ingredients

250g 
Peeled Raw Prawns
1 tsp 
crushed garlic
1 1/2 tsp 
mild curry powder

Directions

Fry the garlic and curry briefly in a little oil. Add the prawns and toss in the spice mix until they turn pink all over.

Pairing Medium with food

The ideal temperature to serve a Medium Sherry is at between 12 and 14ºC, though this will depend upon the form and moment of service. 

Besides being a pleasant aperitif, served chilled it is the most suitable wine to accompany pâté, quiche and any especially spicy dish (curried rice, etc...).
