Medium sherry is a blend of Oloroso and or Amontillado and normally blended with a small proportion of PX around 5%. The wine has an incredible range of character and balance and pairs perfectly with sweet and savory combinations.

olive oil
1 tbsp
sherry vinegar
1 tbsp
maple syrup
Directions
Slice the apples thinly, toss with the cheese and rocket. Combine the vinaigrette ingredients and drizzle over.

Pairing Medium with food
The ideal temperature to serve a Medium Sherry is at between 12 and 14ºC, though this will depend upon the form and moment of service.
Besides being a pleasant aperitif, served chilled it is the most suitable wine to accompany pâté, quiche and any especially spicy dish (curried rice, etc...).
