Medium has an incredible range of character and balance and pairs perfectly with sweet and savory foods, such as Quiche.
The wine is a blend of Oloroso and or Amontillado and normally blended with a small proportion of PX around 5%.

shortcrust pastry

chopped bacon

Directions
Roll the pastry and form to a buttered quiche or pie dish. Beat the eggs together then add the other ingredients. Pour the mixture into the pastry case. Bake until top is golden.

Pairing Medium with food
The ideal temperature to serve a Medium Sherry is at between 12 and 14ºC, though this will depend upon the form and moment of service.
Besides being a pleasant aperitif, served chilled it is the most suitable wine to accompany pâté, quiche and any especially spicy dish (curried rice, etc...).
