This cocktail is unique, intriguing, and food friendly with a beautiful, silky texture.
Ingredients
Directions
Spritz a chilled Martin glass with Sherry vinegar. Add all other ingredients to a mixing glass. Add crushed ice and stir briefly (10-15 seconds). Strain into chilled, prepped Martin glass.
*Infused rum
1 750ml bottle Goslings Black Seal Rum
8 oz liquefied Serrano or Iberico ham fat
4 oz roasted peanut oil
Combine all ingredients in a glass container and refrigerate overnight agitating a few times.
Strain through coffee filter lined fine strainer.

Pairing Oloroso with food
The ideal temperature at which to serve an Oloroso is at between 12 and 14ºC.
This is the most suitable wine to accompany red meat and game. It combines perfectly with meat stews and casseroles; especially gelatinous meat such as bull's tail or cheeks. The perfect match for wild mushrooms and well cured cheeses.
