Finalist in the 2015 U.S. Sherry Cocktail Competition

La Frontera is simple, rich, and flavorful. It's a great vehicle for exploring Sherry in a new way at the end of a meal.

Ingredients

1.5 oz 
Gonzalez Byass Viña AB Amontillado
.5 oz 
Smith & Cross Rum
1 oz 
orgeat
.75 oz 
fresh lemon juice
1 whole 
egg
Garnish 
spray of Cavendish tobacco tincture

Directions

In the following order, combine the ingredients in a shaker: lemon juice, orgeat, Smith and Cross Rum, Amontillado, then egg. Add 5-6 walnut-sized chunks of ice and shake with gusto until well chilled (20-30 seconds). Strain off ice and shake again to build the body of the cocktail (another 10-15 seconds). Fine-strain into your chilled stemware, such as an oversized martini glass. Finish the cocktail by spraying a mist of Cavendish tobacco tincture over the top. Enjoy.

Pairing Amontillado with food

Amontillado should be served at a temperature of between 12 and 14º C.

It is an ideal wine to accompany soups and consommés, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses.

It combines perfectly with vegetables such as asparagus and artichokes.

Serve it between 12° and 14° C in a white wine glass.

Dry but Intense

Its dry and intense flavour adapts to difficult and risky pairings.

Ideal to Drink Glass by Glass

Its composition allows it to be stored in open bottles for months.

  • Sugar < 5 gr. / litre (normally < 1 gr. per litre)
  • Total Acidity (tartaric) 4 - 6 gr. / litre
  • Volatile Acidity (acetic) < 0,8 gr. / litre
  • Very Low In Glycerine Content 3 - 5 gr. / litre
