Carefully pour Amontillado and Scotch into the Collins glass. Use tongs to place 6 kold-draft cubes in Collins glass, as little splash as possible. Use a barspoon to hold the ice to one side as you pour the Sancerre, and then the sparkling mineral water into the beverage, avoiding the sides of the glass. Then, use a barspoon to place 3 heaping barspoons of maraschino/citrus creme on top of the cocktail. Serve on a light-colored linen coaster.

Combine in a boston shaker and shake for 45 seconds. Lasts 24 hours.

Pairing Amontillado with food
Amontillado should be served at a temperature of between 12 and 14º C.
It is an ideal wine to accompany soups and consommés, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses.
It combines perfectly with vegetables such as asparagus and artichokes.
