Anchovies on toast with tomato
Pair with Amontillado
Amontillado contains low acid levels and so it is the perfect complement for any dish that contains tomato, on the other hand the salinity of the anchovy combines perfectly with the dry and salty flavors of the Amontillado.
Ingredients

bread sticks
1
tomato
1/2
clove of garlic
extra virgin olive oil
anchovies in vinegar
salt
Directions
Crush the tomato together with garlic, salt and a drizzle of good quality virgin olive oil. Toast the bread and lavishly spread the tomato mix on top.
Finally, place two anchovies on top and voilá!

Pairing Amontillado with food
Amontillado should be served at a temperature of between 12 and 14º C.
It is an ideal wine to accompany soups and consommés, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses.
It combines perfectly with vegetables such as asparagus and artichokes.
