Starring Oloroso

This cocktail is a trip!  It pushes the drinker to enjoy multiple sherries in a different way. The earthiness of the coffee infused Dolin Blanc play so nicely with the saline and yeastiness of the Tio Pepe fino sherry. The Guatemala Finca el Injerto has a buttery structure, supported by honey and brown sugar with complimentary notes of orange, plum and dark chocolate. There is weight and body with the combination of Pierre Ferrand cognac and Lustau Moscatel sherry.  And the Lepanto spanish brandy and Lustau Oloroso sherry compliment each other so well, bringing out notes of honey and almonds. The cherry on top is a shout out to Manzanilla sherry by using a couple dashes of honey-chamomile bitters, since Manzanilla means chamomile in Spanish.

Dram Honey-Chamomile Bitters
1/4 oz 
Lustau Moscatel Sherry
1/2 oz  
Tio Pepe Fino Sherry
1/2 oz 
Guatemala Finca el Injerto Infused Dolin Blanc Vermouth
1/2 oz 
Pierre Ferrand Cognac
1 oz 
Lepanto Spanish Brandy
1 1/2 oz 
Lustau Oloroso Sherry
Garnish 
Light orange oil and a chamomile flower

Stir/Up - Coupe.

Pairing Oloroso with food

The ideal temperature at which to serve an Oloroso is at between 12 and 14ºC. 

This is the most suitable wine to accompany red meat and game. It combines perfectly with meat stews and casseroles; especially gelatinous meat such as bull's tail or cheeks. The perfect match for wild mushrooms and well cured cheeses.
