El Cid is wonderfully balanced with bright acidity from the vinegar syrup but still with great depth thanks to the combination of Sherry & Mezcal.
Ingredients
2 oz
Emilio Hidalgo Gobernador Oloroso Sherry
1 oz
Del Maguey San Luis del Rio Mezcal
.5 oz
Torres Orange Liqueur
.25 oz
sherry vinegar syrup (1:1 ratio of sherry vinegar and pure cane sugar)
2 dashes
mole bitters
Garnish of
1 lemon wheel & 1 orange wedge
Directions
Take white wine glass and place lemon wheel inside against the bowl. Fill with ice, place orange wedge on top and set aside. In shaker add all liquid ingredients and shake with ice. Strain into pre-garnished wine glass and serve.

Pairing Oloroso with food
The ideal temperature at which to serve an Oloroso is at between 12 and 14ºC.
This is the most suitable wine to accompany red meat and game. It combines perfectly with meat stews and casseroles; especially gelatinous meat such as bull's tail or cheeks. The perfect match for wild mushrooms and well cured cheeses.
