Starring Oloroso

Winner of the 2009 U.S. Sherry Cocktail Competition, the Bread & Wine hits as a fantastic cocktail on many levels. It features the Sherry as a co-base spirit and draws out the elements so carefully crafted into this amazing ingredient. The inherent nuttiness, balanced, lingering bitter notes and mild fruit tones pop as they combine with the exquisitely crafted single malt. The touch of lemon brightens all of the flavors as the maple syrup becomes a perfect partner to bridge the flavors of Jerez and Speyside. A light rinse of absinthe contributes the final layer of complexity, adding an element of intrigue and eluding to amazing food flavor combinations.

Ingredients

1 oz.  
Lustau Don Nuño Dry Oloroso
1.5 oz.  
Balvenie 12 Year Doublewood Scotch
5 dashes 
Absinthe
1/2 oz. 
fresh lemon juice
1/4 to 1/3 oz. 
maple syrup (depending on tartness of the lemons)

Directions

Fill Old Fashioned glass with ice- dash with absinthe and set aside to season.
Combine Sherry, Balvenie, lemon juice and maple syrup in mixing glass. Add ice and shake well. Empty Old Fashioned glass, coating sides with absinthe. Add Kold Draft or large pieces of ice. Strain cocktail into glass.
Garnish: Cut a strip of orange zest using a vegetable peeler. Mist top of glass with oil, rub rim & place decoratively in glass. No straws please.

Pairing Oloroso with food

The ideal temperature at which to serve an Oloroso is at between 12 and 14ºC. 

This is the most suitable wine to accompany red meat and game. It combines perfectly with meat stews and casseroles; especially gelatinous meat such as bull's tail or cheeks. The perfect match for wild mushrooms and well cured cheeses.
