This cocktail challenges expectations. Banana and Sherry are a very traditional pairing when it comes to dessert but this is not a traditional dessert drink. By infusing fresh, ripe banana directly into Oloroso with the help of a centrifuge, it manages to perfectly preserve both the brightness of the banana and the nuttiness of the Oloroso. It also lends a balance of flavor that allows for the Oloroso to be the stand out star of a drink that has the heft and weight of a traditional stirred cocktail while still maintaining a subtlety and a low ABV.

Combine all ingredients in a mixing glass. Stir with Kold Draft ice. Strain into a Nic & Nora glass garnished with a chocolate stripe.

Pairing Oloroso with food
The ideal temperature at which to serve an Oloroso is at between 12 and 14ºC.
This is the most suitable wine to accompany red meat and game. It combines perfectly with meat stews and casseroles; especially gelatinous meat such as bull's tail or cheeks. The perfect match for wild mushrooms and well cured cheeses.
