Ingredients
2.5 oz
Amontillado
.5 oz
Honey syrup (1:1 honey mixed with boiling water & cooled)
.5 oz
Fresh squeezed lemon juice
Fresh
ginger
Garnish
orange twist
Soda
Water
Directions
Lightly shake & double strain all ingredients into glass.
Then add cracked ice, top with a sparkling mineral water and a couple drops of raw ginger juice (slice a piece of ginger and squeeze over top.)
Serve in a tall collins glass over ice, garnish with a straw and orange twist, freshly grated nutmeg is optional.

Pairing Amontillado with food
Amontillado should be served at a temperature of between 12 and 14º C.
It is an ideal wine to accompany soups and consommés, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses.
It combines perfectly with vegetables such as asparagus and artichokes.
