The Ciclope is a fall aperitif, the dry nutty character from the sherry play well with the apple and whisky notes from the applejack, while the sweet bitterness from the amaro and honey brings out the raisin and fruit from the sherry, while also providing that complex bitter backbone.

There is just enough lemon to ripen that fruit flavor and also lift and brighten the drink as a whole without making a sour. The soda draws all the flavors out with the refreshing fizz, and the nutmeg & bitter float nail down a fall spice component on the nose everytime a sip is taken.

It is a fantastic patio aperitif for the transition from summer to fall. The sherry and nutmeg lingers on the palette with notes of spiced hazelnuts.

Ingredients

1 1/2 oz. 
Lustau "Los Arcos" Dry Amontillado
3/4 oz. 
Laird's bonded applejack
3/4 oz. 
Amaro Averna
1/2 oz. 
Honey syrup
1/4 oz.  
Lemon juice
2 oz. 
Club soda
2 dashes 
Angostura
Fresh  
Nutmeg
lemon peel

Directions

Add lemon juice, honey, amaro, Applejack, and Sherry to a mixing glass.  Add ice and stir vigorously to combine.  Strain over fresh ice into collins glass and top with club soda. Float 2 dashes of Angostura bitters and grate fresh nutmeg over top.  Express a medium size lemon peel and place on top of the glass.

Pairing Amontillado with food

Amontillado should be served at a temperature of between 12 and 14º C.

It is an ideal wine to accompany soups and consommés, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses.

It combines perfectly with vegetables such as asparagus and artichokes.
