Exciting, unique and delicate
Do you have a philosophy when it comes to pairing Sherry with food, or for creating food to pair with Sherry?
We see sherry as a wine and with all it's different faces a very wide inspiration for combining lots of different pairings.
We study the character of the wine and try to combine as exciting as possible but with respect for individual ingredients and the flavor of the wine.
What is your favorite non-traditional Sherry pairing?
Rabbit with it's intestins as a crepinette with a Hindustan Massala and orange.
Wine: Oloroso El Cerro from Callejuela
Why did you want to participate in Copa Jerez?
We really like the product, the region and local cuisine. And challenging as a measurement of our skills in a well-known international competition.
