How long have you been working in Sherry and for how long have you been working at this Bodega?

I was practically born there and I am 71 years old. 

At 14 I was helping my father and at 16 I started work there.  

What made you want to become a Sherry winemaker?

It is part of my family tradition, it is in the blood and it looks as if my daughters will carry on the tradition.

What wine are you proudest of and why?

Fino, Amontillado and Palo Cortado. 

Because these are the wines which we have always made by biological ageing.

What is your favourite Sherry and why?

Fino, Amontillado and Palo Cortado. 

These are the wines which have biological ageing and which at the end of the day are the most complex and most typical of our wines.

What is your favorite Sherry wine pairing?

Every year I discover new pairings which never cease to surprise me. 

I love the sea and anything which comes from the sea goes perfectly with Fino (if it is a fresh flavour) or Amontillado (if it has a more complex flavour).

Sherry is so unique to other wines -- what Sherry fact do you find most interesting?

They are wines which still remain to be discovered, completely different and very versatile. 

Wines with great personality.

 

What plans for innovation and development do you have and where do you see the future for Sherry?

We are waiting for them to approve biologically aged wines below 15% alcohol which come about naturally since the yeast consumes alcohol, and that way we would be able to save on all the taxes that are nearly drowning us. 

The future must be:

  • To get it into our heads that it is a wine of great quality which needs adequate promotion
  • It needs to be profitable
  • It should always accompany haute cuisine

What are your earliest memories of Sherry wines?

As long as I can remember. 

When they were girls my aunts used to swim at the door of the bodega because the sea came right up to the door.

Registered name: Juan Carlos Gutierrez Colosia

A family bodega since 1838 where Sherry wines, vinegars, and brandies are made using the traditional solera and criaderas system, favoring particularly the ageing of wine under the veil of flor. The bodega's products were sold to other bodegas until 1998, when the family decided to commercialise their own wines and create the brand “Gutierrez Colosía." One of its unique features is its location right on the Guadalete river, currently making it the closest bodega in the Sherry triangle to the sea,
