Palo Cortado pairs like no other with this dish, it's strong personality compliments the spices and tenderness of the lamb.
Ingredients
600 gr
boneless lamb meat
half bunch
fresh coriander
3
garlic cloves
1 tablespoon
mixed spices
1
lemon
2 tablespoon
olive oil
1 pinch
salt
1 pinch
pepper
Directions
Cut the meat into cubes and chop the garlic and coriander, place into a stainless steel bowl. Add the lemon juice, olive oil, spices, salt and pepper. Leave to marinate for at least 30 minutes in the refrigerator, the longer you can leave them the better.
Pinch the meat onto wooden skewers and grill on the barbeque until golden brown.
