The combination of Fino and Amontillado in this cocktail shows how diverse the Palomino grape truly is. On the Vine allows the mineral aspects of each sherry to be shown whilst the true umami character of the drink comes through.

Shake all ingredients over cubed ice, fine strain into a clean tin and carbonate twice in an ISI canister (shaking slowly each time to incorporate the gas), slowly release drink over block ice in a rocks glass and garnish with Lemon Thyme.

Pairing Fino with food
It is an ideal aperitif wine and goes well with all types of tapa, especially olives, nuts and Iberian cured ham.
Also providing the perfect companion for shellfish and fish, especially those with a marked salty taste (anchovies) or even raw (sashimi).
Its low acetic acid content combines exceptionally well with dishes of marked acidity (vinaigrette salads, marinades, etc.) as well as with cold soups (gazpacho, ajo blanco, etc.).
