Ingredients
2.5 oz
Fino Sherry
.5 oz
fresh lime juice
.5 oz
Pineapple Gomme ( Gomme Arabic infused with fresh pineapple)
.25 oz
Velvet Falernum
.25 oz
Green Chartreuse
10 drops
Saline Solution (1 part salt to 10 part water)
Directions
Shake over ice with 1/2 inch of celery and a slice of cucumber. Strain into a Highball, add crushed ice, and garnish with a long slice of cucumber.

Pairing Fino with food
It is an ideal aperitif wine and goes well with all types of tapa, especially olives, nuts and Iberian cured ham.
Also providing the perfect companion for shellfish and fish, especially those with a marked salty taste (anchovies) or even raw (sashimi).
Its low acetic acid content combines exceptionally well with dishes of marked acidity (vinaigrette salads, marinades, etc.) as well as with cold soups (gazpacho, ajo blanco, etc.).
