Starring Fino

The Andalusian Smoke is strong because it resembles a wonderful partnership between opposing forces. It is a great marriage between powerful personalities who understand each other perfectly. I think of it like the Clintons - an analogy with some flaws perhaps, but the message comes through!

The masculine and feminine forces at play in the Andalusian Smoke come together so gracefully and harmoniously that it is as if they were always meant to be together. Vida Mezcal contributes a strong masculine smokey flavor at the front, which is then swiftly complemented and cleaned up by the subtle brine, lemon and nutty flavors of the Fino Sherry, as well as the seductive aromatic qualities of the basil and bitters. The overall affect is rather undescribable; the whole is greater than the sum of its parts.

Ingredients

2 oz. 
Del Maguey Vida Mezcal
1 oz.  
Hidalgo Fino Jerez Seco
0.5 oz 
Housemade basil syrup
0.25 oz 
Lemon Juice
dashes Bitter Truth Creole Bitters

Directions

Build all ingredients in a mixing glass.

Add one inch ice cubes.

Stir and strain into martini glass and garnish.

Pairing Fino with food

It is an ideal aperitif wine and goes well with all types of tapa, especially olives, nuts and Iberian cured ham.

Also providing the perfect companion for shellfish and fish, especially those with a marked salty taste (anchovies) or even raw (sashimi).

Its low acetic acid content combines exceptionally well with dishes of marked acidity (vinaigrette salads, marinades, etc.) as well as with cold soups (gazpacho, ajo blanco, etc.).

Always serve chilled

Use an ice bucket with both ice and water to serve chilled between 6º & 8º C.

Perfect for Tapas

It adapts perfectly to a diverse range of salty and intense flavours.

In traditional wide-rimmed catavinos, or in white wine glasses.
