UK finalist: 28°-50° Fetter Lane

A preview of the short-listed menu from 28°-50° Fetter Lane restaurant, that will go on to compete in the UK finals of Copa Jerez in London in October, 2016

Located in the historic City of London, 28°-50° Fetter Lane is a relaxed and friendly, award-winning wine bar and restaurant. The passion here is most definitely wine and Tarja Silvani, head chef, alongside head sommelier Alan Bednarski have proved their passion for Sherry is just as important.

Their matching menu is based on fresh, high quality ingredients and the way in which those ingredients blend together on the palate and are enhanced by the Sherries they have chosen to work with.

The starter is a combination of strong and contrasting flavours, described simply as: Sardines, fresh cut fennel, Granny Smith apple, dill, chives, and Lemon with Manzanilla La Guita pearls. The wine to match, unsurprisingly, is La Guita Manzanilla, which the sommelier feels works well with the crisp, fresh aromas of the salad and is perfect foil for the rich Sardines.

Main course is venison two ways, aged fillet and slowly cooked shoulder, with autumn vegetables and hickory smoked chestnuts which is matched with the 50+ year old Cuatro Palmas Sherry from González Byass. Chef explains that “My philosophy of cooking is working on as bast as possibly ingredients that I can find on the market. I always want to keep dish as simple as possible using traditional way of cooking with touch of molecular techniques which is giving a fresh wind to inspiration to the dishes.”

For dessert the chosen wine is the East India Solera PX from Lustau which has been paired with roasted white chocolate, sea buckthorn and caramelised walnut, and interesting match for the wine.
